Abstract


Results from previous research that tawas can extend the life of a fish store. The problem in this research are no scientific studies about the ability of tawas can extend the life of smoked fish store, primarily aspects of inhibitory mechanisms to the development of decay microorganisms.
Therefore, this study expected to know the ability of tawas in the process of inhibition on the growth of microorganisms. The results showed that pembaluran and soaking in a solution of tawas have real impact on the water content of tunafish. Tawas can effectively inhibit bacterial growth at
concentrations above one percent in both gram-negative and gram positive. Tawas strong influence on the growth of bacteria, especially in gram-positive bacteria. The influence of tawas on analysis at concentrations above I percent different from below 1 percent. The higher the concentration of tawas is added to increase the number of cell lysis bakteri. The trend of increasing number of cell lysis occurs in both gram-positive or gram negative. Tawas strong influence on bacterial cell lysis mainly on gram-positive bacteria. From this experiment does not exist in the ability of alum to form isotonic solution.
